While the actual lore doesn't address this at all, for RP purposes, the icon for "Maverick" and Maverick himself are one in the same.
Maverick is a moonbound shifter, meaning he assumes his dark horse form during the full moon. However, he can also assume the form whenever he wants. He rarely does that, though.
Maverick's transformations can also be triggered by moments of extreme stress. He spent a lot of his life trying to suppress his changes and hide them, and in doing so without a mentor to teach him, has made it really easy for him to feel overwhelmed and let the horse out.
Headcanon Time: Maverick's shifting is the result of a family curse that only effects the first born of a given family. For several generations, the eldest child in his family was a daughter, hence, there was no one living to guide him and he had to learn everything about it through trial and error, as well as yellowed, decomposing journals. His mother was insanely overprotective of him in his younger years before his younger brother was born. It was a ploy on her part to cover up the fact that she felt an insane amount of misplaced guilt and doubted that her son would ever be able to function in the outside world. Beauregard overheard her crying to his father multiple times and the young boy vowed to never be a burden, though this led to a maladaptive strategy of keeping all relationships surface level and driving himself to exhaustion, neither of which really helped him. He believed that if anyone knew the truth about him, they would just pity him the way his mother did, so he was always careful to be pleasant but the instant anyone got close to him, he would back off and act cooly towards them (I.E. Digger's accident).
Shifted Form: Maverick's shifted form is a literal dark horse. It is so black, it appears blue and its eyes shift from yellow/gold to red depending on mood with warm gold being at peace and red being agitated and angry. He maintains his mind and sense of self while shifted, but he is far more emotional and wild in horse form. He is unable to speak while shifted, but he is able to communicate telepathically with other magical beings including other shifters, ghosts, druids, wizards, etc, but not ordinary humans.
